There are plenty of “tea” cookies out there… so why not some “coffee” cookies? These cookies are brown sugar based with a hint of coffee taste. They are nice and crisp on the outside but chewy on the inside… great with a nice strong cup of black coffee (my favourite kind lol)

These are the ingredients needed to make these cookies.
- 1/2 cup butter/margarine
- 1 cup brown sugar
- 3 tbsp. white sugar
- 1 egg
- 2 tsp. vanilla
- 1 3/4 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. instant coffee
To make the cookies, you start by creaming together the butter/margarine and the sugars, until well combined.
And the add the egg and vanilla, mixing until light and fluffy.

And then the instant coffee, mixing until fully incorporated.

Now you add the flour, baking powder, baking soda and salt, mixing to form a nice dough.
Scoop to dough and shape into about 1 inch balls and place on parchment paper lined baking sheets and then use your hand or the bottom of a glass to flatten the balls.

Bake at 300 degrees for about 18 minutes, until the cookies start to brown but are still a bit soft in the centre.

Allow to cool 5 minutes before removing to a plate. Enjoy with a nice cup of coffee!
