The first time I had this my ex sister-in-law brought it over. When she said Saltine Toffee it didn’t sound appetizing at all lol. The thought of making toffee with crackers just seemed wrong. But being a good sport (the chocolate on top didn’t hurt), I tried it and now wish I hadn’t. It is very addicting. Chris loves it too and generally eats enough in one sitting to make himself ill!
This is a very easy recipe but you have to make sure to follow the instructions regarding how to boil the sugar mixture or it will not work!

The ingredients for this are probably things you have on hand at any given time. Not necessarily a good thing once you have tasted it!!!
The first thing you need to do is line a cookie sheet or jelly pan with tin foil and then grease it well. I always use cooking spray, applied generously to the foil.
Once the pan is ready, place the saltine crackers over the entire surface of the cookie sheet and then set aside.
Next you are going to add the butter/margarine and the brown sugar to your large pot. (This will bubble up a bit once it starts to boil). Bring the mixture to a full boil and….. this is the important part…. let this boil for a full 3 minutes, without stirring.
When your 3 minutes are up, pour the sugar mixture carefully over the crackers on the cookie sheet you set aside above, making sure to coat every cracker.
Place the pan in the preheated 400 degree oven and bake for 5 – 7 minutes. You will see it bubbling while it’s in there. I tried to take a picture through the oven door but it just didn’t work.
Remove from oven and immediately sprinkle with the chocolate chips.
Let the chocolate chips sit long enough to start to melt, they will look a bit shiny. Using a spoon, spread the melted chocolate to cover the entire surface of the pan. If you are adding anything to the top, sprinkle it on now.
Now some people say to leave it sit at room temperature until it is set, but I like to put mine in the fridge for about 3 hours and then remove from pan and break into pieces.
Not that it ever lasts that long in our home, but you can store it in a sealed/covered container in the fridge for about 2 weeks!

- 2 Cups Chocolate Chips (I used dark chocolate)
- 1 Cup Toffee Bits, Peanuts, Almonds, etc., ( optional)
