There are plenty of “tea” cookies out there… so why not some “coffee” cookies? These cookies are brown sugar based with a hint of coffee taste. They are nice and crisp on the outside but chewy on the inside… great with a nice strong cup of black coffee (my favourite kind lol)
Have you ever made your own marshmallows? I made some for the hot cocoa baskets we did this past Christmas. I know it seems time consuming for something you can usually pick up at the dollar or grocery store, but I think it adds a nice touch to a basket…. especially if you colour them to match the season.
I didn’t cut mine into any fancy shape for Christmas, just added food colouring to make them a nice green colour for the season. As I said, they do take a bit of time but I think it’s worth it to add that little bit extra to a gift basket!
Yesterday I spent a wonderful day with my mother-in-law, doing some online Christmas shopping, eating things we shouldn’t be eating lol, doing a quick tour of the local antique/consignment stores (those that were open) and just enjoying chatting. I didn’t get anything “crafty” done other than cutting a few words out using my Cricut for some wine glasses she wanted to gift friends of hers. That meant we had to go into my craft room which is a complete disaster area right now. I had hoped that was something we could avoid lol… but thankfully she is also a very talented crafter and understands the mess that accompanies the hobby lol!!!
When I made these squares the other week, Chris apparently took the name of them to heart lol. He couldn’t seem to stop eating them lol! I am glad he enjoyed them. I knew he liked the chocolate bar with the same name so I thought for sure he would like squares fashioned after them… and he most definitely did!
Yesterday I spent trying to catch up on 3 weeks of minimal cleaning ☹. Ask me how much fun that was, or how much my head liked it lol… but the house is now clean again which means I can play again!!!
For now I thought I would share/repost one of our favourite fall/winter “comfort” desserts! 😊
I make this dessert a lot in the winter. It is warm, chocolatey, gooey and just an all round delicious dessert. I know it isn’t winter yet but it is fairly cool our right now so it seemed as good a time as any to make it again!
Yes, I have already started to plan what Christmas cookies I am planning/hoping to make this year. I usually make at least 5 plates as gifts/hostess gifts each year so I like to try a few different things each year to change things up a bit.
I do stick to a few of the “usual” types…. gingerbread, plain shortbread, thumbprint cookies, that sort of thing but I really enjoy trying new types of cookies.
This post is to introduce everyone to some of the cookies I have come across that I want to add to my baking list this year. I am sure you will agree that they all look drool worthy!

These are just a few of the recipes I want to try this year. I could honestly do about 100 posts of Christmas cookies that look so good I want to try them… but there is only so much time and only so many cookies I can make each year so I have to pick and choose wisely lol.
I like to have a selection of flavours and colours to make the Christmas Cookie Trays look interesting!
I knew I was going to be out of town today but didn’t get anything ready to post, so I thought I would reshare my pumpkin pie recipe. It seems fitting since it is our Canadian Thanksgiving this weekend !
I did a lot of cooking yesterday and hopefully I will get it all posted before Thanksgiving actually arrives.
I know it seems easy to just buy a can of prepared pumpkin pie filling but it really isn’t that much more difficult to mix it up yourself with a can of pumpkin puree. I have been making this same recipe for probably almost 30 years now… and yes, that was hard to admit to… and other than the one time I forgot to add the sugar lol, it has always tasted great.
I wanted to do an update on this post. I liked the texture of this loaf cake, and how fresh it stayed in both flavour and texture that I decided to try it with another cake mix/pudding combination.
This time I used a white cake mix and vanilla pudding. I also had about a cup of chocolate chips left in the cupboard so I threw them in too.
While the taste and texture was still awesome and chocolate chips do taste really good in it, the chocolate chips all sunk to the bottom of the loaf. I know that doesn’t affect the taste at all but I think next time it would probably work better if I added the chocolate chips or anything else I might want to add to the dry ingredients to see if they “stay” where they are supposed to be…. scattered throughout the loaf. Still a great taste and texture, just sunken chocolate chips lol!
Next I’m thinking maybe a nice spice cake mix and butterscotch pudding lol???
Last week I finally tried one of those cake mix/pudding recipes… you know the ones that say only 5 ingredients too make?
I really didn’t expect it to work out very well because I tried the same sort of thing with cake mix donuts a few weeks back. That was an epic fail! When I tried to get them out of the pan they just crumbled.
Why I thought it would be a good idea to give it another go is beyond me, but thankfully this time it was an epic win!
The loaf cake turns out so moist and flavorful, and it almost has a pound cake texture. I will definitely try it again!
For as far back as I can remember, this has been one of Dillon’s favourites. He always swore up and down he didn’t like anything with nuts in it, but he loves this loaf cake.
His grandmother used to make loaf after loaf of this each Christmas. I don’t make anywhere near that many loaves and I don’t think it should be relegated to just being eaten at Christmas…. so I make it all year round!
We were having company on Sunday, a nice visit with my brother-in-law and nephew. I made a huge pan of lasagna, French bread, Caesar salad and then this cheesecake for dessert. You can never go wrong with cheesecake… am I right lol?
Cheesecake is a favourite around here… this one being about 2nd or 3rd on the list of favourites! It is easy to make and well worth the time it takes to make it… which really isn’t that bad either!
The cheesecake was delicious even though it cracked a bit through the middle. It certainly didn’t affect the taste… just the aesthetics of the cheesecake. Since no one was grading me on the appearance of it, it was a great success for dessert.
I wanted to make a batch of cookies with something other than just chocolate chips or raisins or that sort of thing. Then I thought….. why not make some with chocolate chips, but both milk chocolate and white chocolate chips plus dried cranberries (aka craisins lol). Add a little cinnamon to the cookie dough and they were delicious! A nice Fall version of the typical chocolate chip cookies!
And before I forgot about… I wanted to introduce everyone to “The Elusive Loch Ness Cucumber lol. I found this in my garden and mine and Chris’ first thought was that it looked like the Loch Ness Monster lol!
