After a stressful day at work, the last thing I want to do is come home and make a snack before dinner (especially if said snack is going to result in dishes; I hate doing dishes!).
As such, I am always looking for quick, easy, and low-dish-yielding recipes to give me a boost of energy when I get home from work.
This week I decided to try out a Greek Yogurt Bark. After coming home and taste testing the first batch today, I’m happy with the result and thought I would post for anyone else that wants to try it out.
Ingredients:
Greek Yogurt
4 tbsp. maple syrup
Raspberries (chopped), about 1 cup
Dark chocolate chips, about ½ cup
Instructions:
1. Combine and Greek Yogurt and Maple Syrup and spread onto a baking pan to create the base of the bark.
2. Add toppings. For this first batch, I decided to use dark chocolate and raspberries – two things guaranteed to make me feel good. You could try other berries or chocolates, oats, etc.
3. Freeze overnight.
4. Break into snack-sized pieces.
It’s as simple as that!
