I would like to start by apologizing for being absent for so long. Hopefully this is the end of the absence. I’m not sure what was different about this Christmas/holiday season, but my holiday hangover has been severe. The exhaustion unbearable. I think the only thing that kept my sanity somewhat in place was Little Lucy. Having the forced breaks so she could do her “business” forced me to take breaks when I normally wouldn’t. At least I had that in my favour lol. Lucy’s sanity saving breaks or not, I’ve had real trouble recovering from the hustle and bustle, stress and overall rush of getting ready for Christmas and just had to step back for a bit to recover. Hopefully I’m done!

This year because I somehow ended up way behind schedule we opted to do a hot cocoa basket for everyone. The base of which is this homemade hot cocoa mix!
It mixes up easy, tastes wonderful and even mixes better in the cup than regular hot chocolate mixes!
The recipe calls for:
- 3 cups dry coffee whitener
- 1/2 cup white sugar
- 1/2 cup cocoa
- 1/8 tsp. salt
To make the hot cocoa mix, you place everything in your blender and mix until the coffee whitener is no longer grainy looking and everything is well mixed.
Store in an airtight container or if gifting place in bags with measured amounts.
1/4 cup of the mix to 8 ounces of boiling water makes a perfect cup of hot cocoa!
