Easter Mint Patties
I first saw this recipe before Christmas, put it on my to do list, but it didn’t happen. So, when I saw the same sort of thing on Pinterest but done in Easter colours, I just had to try it! This is where I saw the original recipe!

Now I of course didn’t follow the recipe exactly. I had to employ my “cheater” methods to make it faster and they actually worked!!!!
While you can find the actual recipe at the link above, I will walk you through the steps I took doing it my way. The end result was great and they are very yummy and minty.
Crock Pot Pork Chops
This is a dinner I made the other night for “the boys,” something quick to put in the crock pot. It simmers for a while and the pork chops come out tender enough to cut with your fork! I just served it with some boiled potatoes (cooked in chicken broth and minced garlic) and some veggies!

Burger Bowls
For dinner tonight I decided to make something different… again.
I recall making these or something similar a while back and decided to revisit it. It is exactly as the title implies, a burger bowl. I made “bowls” out of ground beef and then filled them with lots of good stuff and baked them. A bun less burger if you will.

Meat-Za Pizza
I have seen many different versions of this online, so I decided to make my own version for “the boys.” I used 2 full pounds of lean ground beef, and honestly thought I was making way too much. Dillon ate his one pound meatza pizza in less that 2 minutes. I swear, he inhaled it. Chris ate half of his but we had also gone out for a late lunch so he was still a bit full from that! Either way, it was obviously a hit!

Cherry Cheesecake
I haven’t done so well the past few days with my posts. Between Dr’s appointments and everything else I just haven’t had a chance.
I decided to try to sneak in a quick post on my phone with a family favourite summer dessert because I will be out of town tomorrow for another Dr’s appointment!
My family has been making this exact recipe for as long as I can remember. It is one of our go to dessert recipes that everyone loves!
It isn’t as sweet or heavy as some cheesecakes can be, making it perfect for a summer dessert.

Pot-Chos
Now before anyone gets any crazy ideas…. the “Pot” in “Pot-Chos” is for the potato portion, not something nefarious lol!
I wanted to make something different with my potatoes last night with dinner and this is what popped into my head. I don’t know if it was an original thought (unlikely at this point lol) or not but it sure sounded like a good idea to me!

Spicy Cajun Drumsticks
I bought some chicken drumsticks on sale this week at the grocery store. I had no idea what I was going to make with them at the time but today I decided to make some Spicy Cajun type Drumsticks for “the boys” for dinner, along with some “Sort of Greek Potatoes & Peppers” which I will post tomorrow!
This is a very fast and easy recipe. It’s ready for the oven in about 5 minutes and tastes great!
