Have you ever made your own marshmallows? I made some for the hot cocoa baskets we did this past Christmas. I know it seems time consuming for something you can usually pick up at the dollar or grocery store, but I think it adds a nice touch to a basket…. especially if you colour them to match the season.
I didn’t cut mine into any fancy shape for Christmas, just added food colouring to make them a nice green colour for the season. As I said, they do take a bit of time but I think it’s worth it to add that little bit extra to a gift basket!
Again I forgot to take a picture of my ingredients in the chaos that is preparing for Christmas, but they don’t really require anything you probably don’t already have on hand! But…. here is the list of ingredients needed for this recipe….
- 3 tbsp. unflavoured gelatin powder
- 1/3 cup cold water
- 3 cups white sugar
- 1 1/2 cups water
- 1 1/2 tsp. vanilla
- 1/3 cup corn starch
- 1/3 cup icing sugar + some for coating the knife during cutting
The first thing to do is to soak the gelatin in 1/3 cup of cold water and let it sit for about 10 minutes.
In a large pot, add the sugar and 1 1/2 cups of water. Stir mixture constantly on low heat until the sugar dissolves.
Add the gelatin (that has swollen by now) and stir to dissolve.
Bring the heat up to medium high and bring the mixture to a boil, stop stirring once it reaches the boil.
Allow the mixture to boil steadily until the mixture reaches 230 degrees on a candy thermometer. This should take about 10 – 15 minutes. You will notice a white sort of frothy top starting to appear.
Remove from heat and add the vanilla and food colouring (if using).
Beat mixture with hand mixer until thick and very white (or light green in my case).
I lined a 9 x 13 baking pan with parchment paper and then liberally sprinkled the bottom with icing sugar so the marshmallows wouldn’t stick to the bottom before pouring the mixture into the prepared pan.
I let my marshmallows sit in the fridge to set (wrapped in plastic wrap) overnight.
The next morning I removed the marshmallows from the pan, with the parchment paper and pulled back the sides.
I got a big baggie ready to toss the marshmallows in with a mixture of 1/3 cup of corn starch mixed with 1/3 cup of icing sugar before bagging them up for the gift baskets.
And then I started to cut the marshmallows into squares. I sprinkled a bit of icing sugar on the side of the piece of parchment paper to dip the knife in inbetween cuts so it wouldn’t stick.
Once they were cut and then tossed through the icing sugar/corn starch mixture I bagged them up in smaller bags, closed up those bags and they were ready for gifting!
