Honey Brown Bread

Yesterday was grass cutting day… meaning 2 1/2 hours on the lawn tractor. My head is never happy with that but being spring, the grass grows like crazy. I put dinner in the crock pot so I wouldn’t have to worry after doing the grass what would be for dinner and I started this bread to have with it!

It looks kind of flat in the picture because I forgot that I usually do this bread in 2 loaves and it spread big time on the pan during the second rising!


Here are my ingredients used to make the bread.

I put the yeast, water and sugar in the bowl of my stand mixer and let it sit for about 5 minutes until the yeast was bubbly.

Next I added the honey, molasses and softened butter/margarine and mixed to combine.

I added both flours, salt, cocoa and instant coffee and mixed until it formed a still sticky dough. OPTIONAL: I also added a few drops of brown food colouring to make the bread darker.

I put the dough in a greased bowl, covered it and let it rise until doubled, about 1 hour.

After the dough finished it’s first rising I punched it down and shaped it into a loaf.

I let it rise again until doubled, about another hour and then baked it at 350 degrees for about 30 minutes or so, until it was nicely browned and cooked through.

I sliced it up and served it with dinner… this is one of everyone’s favourite breads!

Honey Brown Bread


  • 1 1/2 cups warm water
  • 1 tbsp. sugar
  • 2 1/2 tsp. yeast
  • 1/4 cup honey
  • 2 tbsp. molasses
  • 2 tbsp. butter/margarine, softened
  • 2 cups white flour
  • 1 3/4 cups whole wheat flour
  • 1 heaping tbsp. cocoa
  • 2 tsp. instant coffee
  • 1 tsp. salt
  • brown food colouring, optional


  1. In bowl of stand mixer whisk together water, sugar and yeast. Let stand about 5 minutes until it is starting to bubble.
  2. Add honey, molasses and softened butter/margarine and mix to combine.
  3. Add both flours, cocoa, instant coffee, salt and food colouring if using.
  4. Mix until it forms a sticky dough.
  5. Knead for about 8 minutes.
  6. Place in greased bowl, cover and let stand for about 1 hour, until doubled in size.
  7. Punch dough down and then shape into a loaf (or two).
  8. Cover and let stand another hour, until doubled in size.
  9. Bake at 350 degrees, until browned and cooked through.
  10. Remove from oven, allow to slightly cool and then cut into nice thick slices
