Meatloaf and Potato “Muffins”

I made these last week for dinner because they are always a hit.  I don’t know why but Dillon seems to love meals that I make in muffin tins.  Maybe because he thinks anything made in a muffin tin can be eaten by hand lol 😦

The meatloaf part can be made ahead of time, adding the potatoes just before cooking.  When I made them this time I forgot to add a bit of grated cheese to the tops of the meatloaf part before topping with the potatoes.  Adding that bit of cheese helps to keep the potatoes from sliding off the meatloaf when serving.


Here are the ingredients I used to make this recipe.

In a large bowl, I mixed together the ground beef, panko, ketchup, Worcestershire sauce, egg, garlic powder, parmesan salt and pepper.

I mixed it by fork and by hand until it was very well combined and then divided it between the 6 cups on my large muffin tin.

I washed, peeled and sliced the potatoes and added them to a large bowl with the olive oil, salt and pepper and garlic powder.

Next is the step I forgot….. add about a heaping tablespoon to the tops of the meatloaves in the muffin tin cups.

Divide the sliced potatoes between the meatloaves, layering them on top of the meatloaf.

I placed it in the oven at 400 degrees and cooked the muffins for about 20 minutes, until they were starting to brown on top.

Divide the remaining grated cheese between the meatloaves and sprinkle on top of each one.

Then put them back in the oven at 400 degrees for another 10 – 15 minutes, until the cheese was melted… and they were ready to eat!

I served them up with a big side of veggies and some nice fresh bread!

Meatloaf and Potato “Muffins”

Preparation time: 15 minutes  Cooking Time: 30 minutes  Servings: 6 large muffins.


  • 1 lb. lean ground beef
  • 1 egg
  • 1 tsp. garlic powder
  • 1/2 cup panko
  • 1/4 cup parmesan
  • 3 tbsp. ketchup
  • 1 tsp. Worcestershire sauce
  • salt and pepper to taste
  • 4 – 5 medium potatoes
  • 2 tbsp. olive oil
  • 1 tsp. garlic powder
  • salt and pepper to taste
  • 1 1/2 cups grated cheese


  1. Preheat oven to 400 degrees.  Lightly grease large muffin tin cups with cooking spray.
  2. In large bowl, combined ground beef, egg, garlic powder, panko, parmesan, ketchup, Worcestershire sauce and salt & pepper.
  3. Mix by fork and by hand until very well blended.
  4. Divide meatloaf mixture between the muffin tin cups and press into cups to form the meatloaf portion.
  5. Wash peel and slice the potatoes.
  6. Add to a large bowl and mix in the olive oil, garlic powder and salt & pepper, mixing to coat all the potatoes.
  7. Sprinkle 1 heaping tbsp. of grated cheese over the meatloaves.
  8. Divide the potatoes between the muffin tin cups, stacking them evenly on top of the meatloaves.
  9. Bake at 400 degrees for about 20 minutes, until they start to brown on top.
  10. Sprinkle remaining cheese, divided evenly between the meatloaves.
  11. Bake an additional 10 – 15 minutes, until the cheese is melted.
  12. Remove from muffin tins and serve.
