Bushman Bread

From what I can gather doing a quick online search, this bread originated in Australia and was traditionally made by campers.  I don’t know how true that quick search result is but the bread is delicious.  It is perfect for when you are looking for something a little less mainstream and is fairly easy to make. And as with most bread recipes when they are baking…. it makes the whole house smell awesome!!!


Below are the ingredients I use to make this bread.

To begin, mix all of the “wet” ingredients into a large measuring cup…. water, evaporated milk, coffee, honey, molasses.

Add this mixture to the bowl of the stand mixer with the yeast and sugar and whisk together.  Let stand about 5 – 10 minutes, until the yeast starts to “bloom.”

Add the softened butter/ margarine and whisk to combine.

Finally, add the flour, cocoa powder and salt and mix to form a soft dough.

Knead dough for about 5 minutes, shape into a smooth ball and place in a greased bowl… turning the dough ball once to grease both sides.

Allow dough to rise, covered, for about 1 1/2 hours until doubled in size.

Shape dough into loaf shape and place in parchment paper lined loaf pan.  Cover and allow loaf to rise for an additional 30 minutes.

Bake at 375 degrees for about 30  – 40 minutes, until the top is nicely browned and it is cooked through.  Allow to cool slightly then slice and serve!

Bushman Bread


  • 1/2 cup warm water
  • 1/2 cup evaporated milk, warmed in microwave
  • 1/2 cup strongly brewed coffee
  • 2 tbsp. butter/ margarine, softened
  • 1/2 cup honey
  • 2 cups white flour
  • 2 cups whole wheat flour
  • 1 tbsp. cocoa
  • 1 tbsp. white sugar
  • 2 tsp. molasses
  • 1 tsp. salt
  • 2 tsp. yeast


  1. In a large measuring cup, whisk together water, warmed evaporated milk, coffee, honey and molasses.
  2. Add mixture to bowl of stand mixer with yeast and sugar, whisking to combine.
  3. Let stand about 5 – 10 minutes, until yeast starts to bloom.
  4. Add softened butter/margarine and whisk to combine.
  5. Add both flours, cocoa and salt to bowl.
  6. Mix until soft dough forms.
  7. Knead for about 5 minutes to form a smooth dough ball.
  8. Place dough  in greased bowl, turning once to coat both sides, cover and let rise 1 1-2 to 2 hours, until doubled in size.
  9. Preheat oven to 375 degrees.  Line loaf pan with parchment paper.
  10. Shape dough into loaf shape and place into prepared loaf pan.
  11. Cover and allow to rise an additional 30 minutes.
  12. Bake at 375 degrees for 30 – 40 minutes, until top is nicely browned and it is cooked through.
  13. Allow to cool slightly, then slice and serve.
