Garlic Cheese Focaccia Bread

What a weekend!  Saturday Dillon took me to town so that I could deliver all the Cookie Grams I made, to pick up some fabric, be tech support for my mother-in-law lol and the best of all…. to babysit my granddaughter!  I had a great time with the little one but it sure tuckered me out.  I didn’t get my lazy ass out of bed until almost 10 o’clock on Sunday!!!! Once I got my marbled somewhat in order I did a little baking.  The  first thing I made was this Garlic Cheese Focaccia bread and it was delicious!



Here are the ingredients I used to make it…. other than the cheese because that was a last minute addition!


The first thing I did was add the warm water, yeast, 2 cups flour, salt, olive oil and 2 tsp. garlic powder to the bowl of my stand mixer and whisked it to form a dough.

Next I added another cup of flour and using my dough hook, mixed it to form a dough…. adding additional flour, as needed one tablespoon at a time, until I had a nice smooth dough.


I let the dough rise covered for about 10 minutes before rolling it into a circle on parchment paper to fit my cast iron skillet.


I flipped the dough circle out into my well oiled cast iron skillet and peeled off the parchment paper.


I covered the skillet and let it rise for about another 30 minutes.

Once the rising time was over, I started making dents in the dough using my fingers and stretching the dough a bit while I did it.


I drizzled and brushed the olive oil over the top of the dough.


And then sprinkled it with the grated cheese, garlic powder, Italian seasoning and coarse salt.


I baked it at 350 degrees for about 35 minutes, until the edges were starting to lightly brown and it was cooked through.


I cut it into wedges and served it up with dinner!



Garlic Cheese Focaccia Bread

Preparation Time: 10 minutes Rising Time: 40 + minutes  Baking Time: 35 – 45 minutes  Servings: 8


  • 1 cup water
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 2 1/2 cups  flour
  • 2 tsp. garlic powder
  • 2 1/2 tsp. yeast
  • 2 tbsp. olive oil
  • 1/2 tsp. coarse salt
  • 1 tbsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1/2 cup grated cheese


  1. Preheat oven to 350 degrees.  Generously oil cast iron skillet with olive oil.
  2. Pour the water into a large bowl and add yeast, 1 cup flour, 2 tbsp. olive oil, and salt.
  3. Add another cup of flour and garlic powder and using dough hook mix to form a smooth dough.
  4. Allow dough to rise about 10 minutes.
  5. After rising, roll dough into circle big enough to fit your skillet and then flip dough into well oiled skillet.
  6. Allow to rise and additional 35 – 40 minutes.
  7. After rising time, use your fingers to poke dents in the dough,
  8. Drizzle and brush the top of the dough with the olive oil.
  9. Sprinkle the grated cheese, garlic powder, Italian seasoning and coarse salt evenly over the top of the dough.
  10. Bake at 350 degrees for about 30 minutes, until edges are starting to brown and it is cooked through.
  11. Cut into wedges and serve.
