I feel like I keep typing this…. but I saw this recipe on Pinterest and decided it was what I would make to take with us on Christmas Eve, when we celebrate with Chris’ family. It just looks so delicious and festive!

These are my ingredients, including the cut up pieces of cake I baked the day before in preparation.
I started with the cranberry filling. I placed the cranberries, water, cinnamon and sugar in a large pot.
Brought it to a boil and let it boil until the berries softened. I took a potato masher and mashed down most of the cranberries and then set it aside to cool.
For the cream filling, I started by adding the corn starch, sugar and salt in a large sauce pan. Then I added the milk and whisked it together.
I brought it to a boil over medium high heat until it started to boil. I let it boil for 2 minutes.
Next I removed about a cup of the hot liquid and added it to the bowl I had the egg yolks in and returned this mixture to the pot. Brought it back to a boil and let it boil for 2 minutes.
After the 2 minutes, I added the butter and vanilla, stirred it in and then set it aside to let it completely cool.
Once everything was cooled and ready, it was time to assemble. Cake first, then cranberries and then cream filling…. and repeat.
I added a few sugared cranberries to the top and wrapped it up to take with us Christmas! Doesn’t it look delicious? I hope everyone enjoys it!
